Spearheaded by Chef Pongcharn “Top” Russell and Chef Michelle Goh, each quarterly dinner has seen old chef friends reunite in the kitchen, showcasing skills honed across Michelin-starred kitchens from Europe to Asia. The final gathering brought this series to a triumphant close, where these culinary virtuosos captivated diners with both their talent and tales from kitchens past.

The Best of the Best in Ingredients

At the heart of every dish, Mia’s chefs partnered with Premium Food Thailand to source the highest quality ingredients, including Wilmot Beef Short Ribs, Marrunga Marble Lamb Saddle, and Rosso Di Mazzara Red Prawns. These ingredients weren’t just accents but the stars of the show, transforming each plate into a tribute to sustainable, regenerative and premium produce. Diners were treated to these ingredients at their peak – an unmistakable testament to Premium Food Thailand’s commitment to quality.

Iron Chef Meets Fine Dining

The series opened with a bang as Chef Tap, Iron Chef Thailand winner and head of Coda Bangkok, collaborated with Top and Michelle in a fusion of Thai flavors and Western techniques. The trio used ingredients like Wilmot Beef Short Ribs to blend tradition with innovation, resulting in dishes that were nothing short of magical.

Sicilian Flair with Michelin Stars

The series didn’t stop there. Next came Chef Giuseppe De Vuono, the executive chef of Hong Kong’s Michelin-starred Octavium, who brought Sicilian influences to Bangkok. Alongside Top and Michelle, he crafted a menu that was both rustic and refined, showing Bangkok what happens when Italian passion meets Thai intuition.

Grand Finale – When Wine Chooses the Dish

The final chapter was a masterclass in culinary creativity. Six of Bangkok’s top sommeliers chose their favorite wines, and Mia’s chefs, alongside Chef Riley Sanders of Canvas and Chef Dimitrios Moudios of Ore, created dishes inspired by these selections. The event blurred the lines between chef and sommelier, pairing Premium Food Thailand’s finest ingredients with carefully curated wines to deliver an unforgettable dining experience.
