Mulwarra Lamb Rack Salt & Pepper Dijon Mustard
Crumb Mix:
Dried Bread Crumb
Whole Garlic Clove
Grated Grana Padano
Fine Chopped Rosemary
Basil
Parsley
Extra Virgin Olive Oil
Salt & Pepper
Instructions
Turn on the oven to 180 C Fan to warm up to temp.
Sear the lamb rack on all sides, adding whole garlic cloves while searing to brown lightly. These garlic cloves will be used for the crumb mix.
Set the lamb aside for resting.
Blend all the crumb mix in the blender.
While still warm, brush the lamb with mustard and crum the mix all over.
Put in the oven for 30 mins or internal temperature 55 c
