Mazara prawns are a type of freshwater prawn that are native to the Mediterranean region.

The name Rosso (red) is due to their vivid red natural color.

They are known for their sweet, delicate and firm texture .

Mazara shrimps are caught 600m depth and immediately frozen onboard. The process is triggered by thermal shock at -50C inside the freezing tunnels. This treatment is key to preserve their nutritional properties , texture and taste.

Rosso di Mazara is a family company with a century of history in fishery.

Today under the guidance of the two brothers Paolo and Nicola Giacalone, the company has come to develop a whole range of products based on the red prawn of Mazara del Vallo.

The indiscriminate use of sulfites on red prawn to prevent melanosis or black spot, can cause unwanted allergic reactions and develop an unpleasant and irritating odor. The total absence of sulfites on red prawn caught by us is certified by the independent laboratory EPTA NORD, which constantly monitors all our production. Numerous sensory tests confirm to us that without sulfites the red prawn maintains intact the organoleptic properties , color , flavor and texture of the flesh

Friend of the Sea is an international nonprofit association with the mission of certifying products from sustainable fisheries.

The Friend of the Sea logo found on our packaging guarantees that red prawn was caught in nets that do not harm the marine habitat.

Reducing sea turtle mortality has always been one of our goals.

A strong inclination to experiment with new technologies applied to fishing allows us to use the TED “Turtle Excluder Device” system by which we prevent them from entering the net bag.

We support the TARTALIFE project and share all its initiatives aimed at the conservation of the sea turtle “Caretta Caretta” in the Mediterranean Sea.

At least 140 marine species are estimated to suffocate because they are entangled in plastic waste of all kinds. In the absence of drastic decisions, it is predicted that by 2050 there will be more plastic in the sea than fish.
