Mazara prawns are a type of freshwater prawn that are native to the Mediterranean region.

The name Rosso (red) is due to their vivid red natural color.

They are known for their sweet, delicate and firm texture .

Mazara shrimps are caught 600m depth and immediately frozen onboard. The process is triggered by thermal shock at -50C inside the freezing tunnels. This treatment is key to preserve their nutritional properties , texture and taste.

The indiscriminate use of sulfites on red prawn to prevent melanosis or black spot, can cause unwanted allergic reactions and develop an unpleasant and irritating odor. The total absence of sulfites on red prawn caught by us is certified by the independent laboratory EPTA NORD, which constantly monitors all our production. Numerous sensory tests confirm to us that without sulfites the red prawn maintains intact the organoleptic properties , color , flavor and texture of the flesh
